The meal: Green apple sorbet with dill and lime; Lacianto kale with lemon dressing, Brush Creek cheese, hazelnuts, black pepper croutons and lemon zest; Eggs on Eggs on Eggs (64-degree eggs, cured fish roe, Escoffier eggs, crème Fraiche and Idaho chips); tater tot casserole wontons with quick rib, mushroom ragout and green onions; and baked potato dashi with bacon, bitter cream tofu, chives and cheddar miso.
